Would it be possible to add balanced inputs to my VTF-3 HO? My preamp puts out balanced outputs for subwoofers. In fact, would there even be any point? Is this just a fad??

RCA out of the sub balanced into your pre-amp.

If your pre-amp has both RCA and balanced outputs, I would just use the RCA. The adapters like that linked are made for occasions where your pre-amp does not have an RCA out. Balanced interconnects are better, but only if both devices support it. They are more resistant to noise. I don't think balanced interconnects will ever really see mainstream consumer applications. They have been around forever, and still only available on commercial and audiophile type equipment.

1. With line out/line in signal leve using balanced line instead inbalanced woild not provide you any audible advantages. The signal/noise ratio difference will be significant onl with mic or phono signal level.
2. Like Stiletto already admitted when you use balanced->unbalanced cable (XLR->RCA) you lose all advantages of balanced cable at all.

The main reason to used balanced interconnects is for rejection of noise. You only really need balanced if you send signals it over long distances or have interference noise issues.
